There are many ways to make a laksa, which is probably why this spicy noodle soup is so popular across South East Asia. Our inspiration for this recipe comes from the Northern Penang version as we think the creamy coconut curry works brilliantly with the black turtle beans and spiced chickpeas. We’ve added thick ramen noodles for some bite and mango chutney for some exotic sweetness. A fresh, modern take on a traditional Malaysian classic. Enjoy.
